30 Minute Chicken Tacos - Instant Pot Recipe

This quick, tasty, and healthy chicken tacos recipe is ready in 30 minutes when you use fresh chicken in your Instant Pot! Use a mixer and shred the cooked chicken in under 30 seconds. Just 4 simple ingredients, too! THM friendly for any fuel style.


  • 3 chicken breast halves (fresh will make it easier for the IP to pressurize)
  • 8 ounce can tomato sauce
  • 1/2 cup salsa
  • 2 teaspoons WFN Taco Seasoning
  • Salt and pepper to taste, if desired


  1. Spray the liner pot of the IP with cooking spray and set IP to saute
  2. Add the chicken breast halves and season with salt and pepper if desired
  3. While the chicken is browning, get the rest of the ingredients ready
  4. Saute chicken for one or two minutes each side, then add remaining ingredients
  5. End the saute function
  6. Set Instant Pot to "Manual" for 10 minutes
  7. Secure lid and make sure vent knob is set to "sealing"
  8. Use NPR (Natural Pressure Release), should be less than 15 minutes. Placing a cold, wet towel over the top can help speed up this process if needed
  9. Open lid when safe to do so
  10. Use a hand mixer to quickly shred the cooked chicken. Cover the IP with a towel to prevent splattering of hot juice
  11. It will look too soupy when you first open the IP, but once the chicken is shredded it will be fine
  12. Serve as desired and enjoy!

Nutrition information is approximate and based on 3 cups of shredded chicken taco meat. Depending on the size of your chicken breasts you may have more or less than 3 cups.
