Dark Chocolate Coconut Cake in a Mug

Craving chocolate? On a low carb diet? This easy Dark Chocolate Coconut Cake in a Mug recipe will give you the chocolate decadence you crave without blowing your healthy eating plan! Sugar and grain free, quick to make! And, you'll find this recipe in the Trim Healthy Mama Cookbook on page 293!


  • 1 egg
  • 1 heaping tablespoon dark cocoa powder
  • 2 tablespoons Greek yogurt (can sub sour cream or ricotta cheese)
  • 1 tablespoon shredded, unsweetened organic coconut
  • 2 teaspoons THM Gentle Sweet or equivalent amount of preferred sweetener
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon pure vanilla extract
  • Pinch or two of THM Mineral Salt
  • Water, as needed for consistency


    Mix the batter

    1. In a bowl or mug, whisk one egg
    2. Add remaining ingredients and mix well to combine
    3. Add water, a tablespoon at a time, until the batter is the consistence of muffin batter

    Microwave cooking:

    1. Microwave for one to one and a half minutes or until cooked through.

    Oven baking:

    1. Preheat oven to 350
    2. Bake for around 12 minutes or until it passes the toothpick test

    Frost or glaze and enjoy!

    1. Mix together equal parts of cream cheese and butter, add sweetener to taste and a splash of vanilla
    2. Or, follow the recipe on page 293 in the Trim Healthy Mama cookbook for a lighter glaze
