Garlic Zucchini Turkey Burgers with Creamy Dijon Sauce

Simple, easy, and healthy these Garlic Zucchini Turkey Burgers are a perfect way to use your bumper crop of zucchini this summer. Stretches your ground meat, too! Trim Healthy Mamas, you can make them to suit any fuel style.


    Garlic Zucchini Turkey Burgers

    • 1 pound ground turkey (96% lean for E and FP versions)
    • 1/2 cup finely diced zucchini (about half a medium zucchini)
    • 1 cloves fresh garlic, minced or pressed
    • 2 tablespoons onion, finely diced
    • 2 tablespoons egg whites
    • 1 teaspoon mineral salt
    • 1/4 teaspoon ground black pepper

    Creamy Dijon Sauce (S)

    Creamy Dijon Sauce (E or FP)

    • 4 tablespoons 0% Greek yogurt
    • 2 teaspoons dijon mustard
    • 1 "doonk" stevia, or to taste


      Make the Burgers

      1. In a mixing bowl, combine ground turkey, zucchini, garlic, salt, pepper and egg whites
      2. Mix well until the zucchini is well incorporated throughout
      3. Form into patties (should get 6)
      4. For S: add a bit of healthy fat for cooking to a skillet and cook on both sides until cooked through
      5. For E or FP (low fat version): spray a skillet with nonstick spray and cook on both sides until cooked through

      Make the Creamy Dijon Sauce

      1. In a small bowl, combine mayo (or yogurt for E or FP), dijon, and stevia and stir well

      For E or FP versions with 97% lean ground turkey, each burger (if you make 6) would have 117.8 calories, 2.8 grams of fat, and 21.5 grams protein.
