▢ 2 cups fine almond flour ▢ 1/2 cup THM Super Sweet or low carb sweetener of choice in equivalent amount ▢ 2 tablespoons OSM Gingerbread Spice Mix ▢ 1 1/2 teaspoons baking soda ▢ 1/2 teaspoon high mineral salt ▢ 1/4 cup melted butter, ghee, or coconut oil ▢ 1 large egg or 2 tablespoons egg white ▢ 1 teaspoon molasses

INSTRUCTIONS

1. Preheat oven to 350 degrees.

2. Mix dry ingredients together well, breaking up any clumps of almond flour.

3. Whisk together egg and molasses then add to dry ingredients.

4. Add melted butter to dry ingredients and mix well until dough forms.

5. Scoop out dough using a tablespoon and roll into ball.

6. Flatten into a disk 1/4" thick and place on baking sheet.

7. Bake for 10 to 12 minutes.

8. Allow to cool on the cookie sheet for 5 minutes then remove to a cooling rack to cool completely.
