2. In a small bowl, combine coarsely chopped fresh cranberries, minced orange zest, and 1 tablespoon granulated stevia. Stir to coat evenly and set aside.
4. In a small bowl, whisk together eggs, nut milk, and vanilla. Pour egg mixture into dry mixture and mix well. Add melted butter or coconut oil and mix well
5. Add more nut milk if batter seems too thick, a tablespoon at a time, until the batter is the right consistency.
Fold in cranberry mixture.
Divide evenly between 12 silicone muffin baking cups (or paper liners in a muffin pan).
6. Bake in preheated oven for 30 to 35 minutes or until the center passes the toothpick test.
Allow to cool completely before removing from silicone baking cups.
