Rich, creamy, and packed with flavor this chunky blue cheese dip is simple to prepare. Give it a few hours of chilling in the fridge for best flavor. It’s a perfect dip for fresh veggies and fabulous on wings. Bonus: it’s a dip everyone will love – THMs, low carbers, and regular eaters too.
While I’m not a fan of wings (soooo much work for like 2 bites of meat) members of our extended family love them. So when we hosted the monthly get together I decided making wings and some assorted sauces and dips sounded like the way to go.
Blue cheese dip immediately came to mind (even though I’m also not a huge fan of moldy-looking cheese). So, I threw this dip together and presented it to the family.
They’re often unwitting guinea pigs for my creations. Stay tuned for a new dessert tried out on them that night.
The verdict? My mother and father in law loved it! I did taste a tiny bit of it and actually liked it. But I was careful not to get too big a chunk of moldy cheese on my celery stick though.
How To Make Low Carb Chunky Blue Cheese Dip.
It really couldn’t be more simple. Just mix all the ingredients together. Then let it chill in the fridge for at least 2 hours for best flavor.
The longer it sits the more the flavors will develop.
Then, serve it on a pretty serving platter. Or fill the bottom bowl of this set with veggie dippers (or wings) and the top bowl with dip.
How To Fit This Dip Into Your THM Menu Plans.
Since we’re using mayo and sour cream as our base, it’s definitely an S. You could, however, lighten it up a bit by using fat free Greek yogurt in place of part or all of the sour cream.
Enjoy with low carb veggie dippers or chicken wings. Or try as a spread for wraps and sandwiches with on-plan low carb bread options.
If you’re hosting a superbowl party, this makes a perfect dip to set out for all your guests to enjoy. As written the recipe makes just a smidge over a cup. Double or triple (or more) for a large crowd.
Finally, if you like to add dips to a charcuterie board this makes a great addition.
