Do you like sweet potatoes?
When I first started THM back in 2014, I really did not like them.
In my mind, potatoes were meant to be white, deep fried, and dunked in something. Or baked and loaded up with butter and sour cream.
Certainly not sweet.
Yet here I am, almost 4 years later, and I’m actually really liking sweet potatoes now! Want to know how that happened?
I discovered ways to make them taste good:

I also discovered that sweet potatoes are a much more gentle carb source for my blood sugar. My body just doesn’t do grains well.
Furthermore, they are packed with antioxidant goodness which makes them more nourishing. Nourishing foods tend to leave you satisfied longer and help your body work well and feel well!

Presenting…Chicken Taco Stuffed Sweet Potatoes!
Stuff your baked sweet potato with chicken taco filling and your favorite veggies, add a dollop of either 0% Greek yogurt (if you have your added fat elsewhere in your meal) or a serving of real sour cream (2 tablespoons has 5 grams).
Hot sauce and salsa would also be great additions, but I enjoyed these Chicken Taco Stuffed Sweet Potatoes with just sour cream, chives, and fresh cilantro.
If you have an Instant Pot, you’ll love my 30 Minute Instant Pot Chicken Taco filling. Depending on how you cook your sweet potatoes, you could have Chicken Taco Stuffed Sweet Potatoes on the table in 30 minutes as well.
You can still make an easy chicken taco filling on your stove top or slow cooker, too.
Baking sweet potatoes in the oven or using your crock pot take longer, but I personally feel they are healthier cooking options. However, if you don’t have qualms about microwave cooking, then you’ll have this meal ready in 30 minutes!
Adding My Chicken Taco Stuffed Sweet Potatoes To Your THM Menu Plan Is Easy.
If you’re following the Trim Healthy Mama plan, you can easily add this yummy dish to your menu plan.
Since this is a low fat, healthy carb source you’ll add this to your E Meal favorites. My chicken taco filling can be made entirely fat free, or with just a gram of fat or so.
I added a bit of MCT oil to the mashed sweet potato, but that is entirely optional.
Using 0% Greek yogurt leaves more room for your added fat grams, but a tablespoon of real, full fat sour cream only had 2.5 grams of fat. Feel free to use that, just keep in mind any other fat sources in your meal so you stay within E range.

As always, do include plenty of non-starchy sides to your meal. A big salad is my favorite choice for this Chicken Stuffed Tacos meal. Try my Creamy Cajun Ranch Dressing or fresh lemon juice on your salad.
Steamed veggies such as green beans, asparagus, or broccoli are also great options. Or, even a soup such as the Trim Train Taco Soup from Trim Healthy Mama would be great. I would leave out the meat though as you’ll have plenty of protein in the stuffed sweet potatoes.

Chicken Taco Stuffed Sweet Potatoes
Baked sweet potatoes stuffed with my easy, low fat (or fat free) chicken taco filling make a perfect low fat, healthy carb meal! Top with fresh herbs and a dollop of 0% Greek yogurt or a bit of full fat sour cream.
Ingredients
For Chicken Taco Filling:
OR For Stove Top:
- 3 boneless, skinless chicken breast halves
- 8 oz can tomato sauce
- 1/2 cup salsa
- 2 teaspoons taco seasoning
- Salt and pepper to taste as desired
For the Baked Sweet Potatoes (per person):
- 1 medium sweet potato
- 1/2 to 1 teaspoon chili powder
- 1/2 to 1 teaspoon MCT oil (optional)
- Fresh, snipped chives
- Fresh cilantro
- 0% Greek yogurt or sour cream
- Salsa
- Hot sauce
Instructions
Prepare And Cook Sweet Potatoes
- Scrub outside and prick with a fork in several places
- Bake in a preheated 350 oven for 45 minutes, or until soft inside OR
- Wrap in waxed paper and microwave. Use your "baked potato" setting if you have it, or cook for about 5 minutes on high then check for doneness. It can take 8 to 12 minutes depending on the potato and the microwave. Microwaves vary so I can't say for sure exactly how to cook it in YOUR microwave.
Make the Chicken Taco Filling
- Follow the recipe instructions for 30 Minute Instant Pot Tacos OR
- Combine chicken taco filling ingredients into a sauce pan and cook over medium high heat until chicken is cooked through and shreds easily. Add liquid if necessary and adjust seasonings if needed
- Use a hand mixer to quickly shred the chicken (use a towel to cover the pan and prevent splashing hot mixture on yourself) or use two forks to shred the chicken.
- OR add the chicken taco filling ingredients to your slow cooker and cook for 4 to 6 hours on high. You'll want to plan ahead for this, of course!
Assemble your Chicken Taco Stuffed Sweet Potatoes
- Cut a slit in the cooked sweet potato lengthwise.
- Using a fork, mash and fluff the sweet potato.
- Add the chili powder and MCT oil, if using, and mix it into the mashed sweet potato until well combined
- Add 1/4 to 1/2 cup Chicken Taco Filling, as desired
- Top with desired toppings and enjoy!
Notes
Trim Healthy Mamas:
- MCT oil is purely optional
- When planning your E meal, think about what makes your meal most satisfying and use your fat grams there. For example, I really do not like to use 0% Greek yogurt in place of sour cream as a taco topping so I choose a tablespoon of full fat sour cream instead. If you need that fatty goodness in your salad dressing, opt for the 0% Greek yogurt and use your fat grams in the dressing instead.
